Baked Oatmeal Squares

I got this recipe from Arlene, my former WW leader who is a great cook and has tons of good WW recipes.

It’s a Core recipe, 2 points per serving; serves 6.

Baked Oatmeal Squares
2 cups uncooked oatmeal (the kind that cooks in 5 minutes is good)
1 ½ tsp baking powder
½ tsp salt
1 cup skim milk
½ cup egg beaters (equiv to 2 eggs)
½ cup unsweetened apple sauce
¼ cup “Splenda” (a little more if you like sweet things) or “Sweet n Low”
1 tsp vanilla extract, and 1 tsp cinnamon

Preheat oven to 350 degrees. Combine wet ingredients, add dry ingredients and mix well. Bake in an 8 inch square pan (brownie pan, oops) for 35-35 minutes. Insert toothpick to be sure it is done.

Cut into 18 squares, 3 squares is a serving. Or any other way you want; the whole pan serves 6. Serve hot, room temperature or cold.

This freezes well. This is an easy portable breakfast. Pop in microwave for 30 seconds if you want it warm. Serve with a container of plain fat free yogurt if you are on core, or add 2 points on Flex. This also makes a good dessert

To change it up a bit:

– Use 2 mashed bananas instead of the apple sauce

– Or use ½ cup canned unsweetened pumpkin instead of apple sauce and use pumpkin spice instead of or in addition to cinnamon
