Here’s another recipe from my friend Arlene. She’s a Weight Watchers leader and a fabulous cook, so anything she recommends is worth trying. Looks good for these hot summer days!
Not Your Mama’s Three Bean Salad
1 tps. Grated lemon zest
1 ½ Tbsp fresh lemon juice
1 Tbsp extra virgin olive oil (use the best you have it enhances the flavor)
½ tsp salt
freshly ground pepper
1 15-oz. can black beans rinsed and drained
1 15-oz. can small white beans, rinsed and drained
1 cup cooked green soybeans (edamame) (I buy frozen, shelled one at Traders Joe’s)
1/3 red onion, finely diced
1/3 red bell pepper, finely diced
5-6 large basil leaves, thinly sliced
you could use 1 tsp dried basil, but it won’t be as good
In a medium bowl combine lemon zest, lemon juice, oil, salt and ground pepper.
Add the rest of the ingredients and toss to coat evenly. Refrigerate for an hour and serve.
Keeps 2-3 days in the refrigerator.
Serves 6 – ¾ cup is 3 points This is CORE
For a meal: Open a can of tuna packed in water, drain well. Put in a shallow bowl and
put ¾ cup of the bean salad over the tuna. Served with sliced cucumbers and sliced tomatoes, this is a great 6 point summertime dinner. This is also CORE
This sounds great! And I just discovered frozen edamame in Tiny Kroger. Only 12 miles away, instead of the hour-long drive to go to Giant Kroger. Heh.
