Another yummy recipe from Arlene, my Boston WW leader. She lost 53 lbs and has maintained that loss for 15 years, so has learned some great tricks and recipes on the way!
Arlene’s Favorite At Home Pizza
1 6 inch Manny’s soft taco size flour tortilla or Traders Joe’s low carb…. (My favorite brand, only 1 point per tortilla)
1 tablespoon pizza sauce (squeeze bottle, like Ragu or Prince) or TJ Jar or 1 tablespoon BBQ sauce (squeeze bottle, like Heinz or Kraft)
2 oz. Canned mushrooms, well drained and squeezed dry with a paper towel (don’t use fresh, they are too watery when cooked)
1 oz either: canned tuna, diced cooked chicken, sliced cooked turkey, or well drained kidney or pinto beans, or cooked shrimp (or any leftover protein)
2 oz shredded part skim mozzarella cheese (fat free if you are on Core)
Preheat oven to 425 degrees
Line a large cookie sheet or jellyroll pan with foil. Put tortilla on foil. I make two pizzas at a time. Tortillas should not touch while cooking.
Spread 1 tablespoon sauce on tortilla, leaving a narrow rim without sauce. Sprinkle on the mushrooms. Add your protein..tuna, chicken, turkey, beans or shrimp. Top with shredded cheese.
You could add thinly sliced onions, tomatoes, scallions, or peppers if you wish.
Bake for about 10 minutes until cheese is all melted and edges of the tortilla look slightly crisp. Remove from foil lined cookie sheet using a spatula.
This is a very thin pizza and is yummy. You will eat it with a knife and fork because the crust is thin and fragile. It takes longer to eat with a knife and fork. That is the good news. Each pizza is 4 points. I have two pizzas for dinner (8 points) with a big salad. What a great meal!
Try this, and add you own ideas to make your own concoctions. Just be sure to adjust the points depending on what you add or subtract.
I eat this on Core…I use Fat free cheese..that’s Core. Each tortilla is one point and I count the one point as my points allowance (slush fund)
